- 1 Large Head Cauliflower
- 3 oz. Cream Cheese
- 1/2 c. Ricotta Cheese
- 1/2 c. Sour Cream (more or less by desired consistency)
- 1/2 c. Cheddar Cheese
- 1 lb. Ground Turkey or Beef
- Salt, to taste
- Pepper, to taste
- Italian Seasoning, to taste
- Garlic and Onion Powder, to taste
- 1/2 c. peas
- Gravy (optional)
Directions:
- Remove the Cauliflower florets and boil or steam them until soft. About 20 minutes.
- Puree, in a food processor or blender, the cauliflower, cream cheese, ricotta cheese, sour cream, salt, and pepper. You could also just whisk in it in a stand mixer if you don't mind some chunks.
- Brown the ground turkey or beef over the stove. Season with the italian seasoning, garlic and onion powders, and salt and pepper-- all according to taste.
- Layer the ground beef, the peas, and the cauliflower in a 9x9 greased baking dish. Top with the shredded cheddar cheese. Bake at 350 until cheese is melted and bubbly.
- Serve with 1-2 T beef gravy over top.
