Low Carb Shepherd's Pie

 Ingredients:
  • 1 Large Head Cauliflower
  • 3 oz. Cream Cheese
  • 1/2 c. Ricotta Cheese
  • 1/2 c. Sour Cream (more or less by desired consistency)
  • 1/2 c. Cheddar Cheese
  • 1 lb. Ground Turkey or Beef
  • Salt, to taste
  • Pepper, to taste
  • Italian Seasoning, to taste
  • Garlic and Onion Powder, to taste
  • 1/2 c. peas
  • Gravy (optional)

Directions:
  1. Remove the Cauliflower florets and boil or steam them until soft. About 20 minutes.
  2. Puree, in a food processor or blender, the cauliflower, cream cheese, ricotta cheese, sour cream, salt, and pepper. You could also just whisk in it in a stand mixer if you don't mind some chunks.
  3. Brown the ground turkey or beef over the stove. Season with the italian seasoning, garlic and onion powders, and salt and pepper-- all according to taste.
  4. Layer the ground beef, the peas, and the cauliflower in  a 9x9 greased baking dish. Top with the shredded cheddar cheese. Bake at 350 until cheese is melted and bubbly. 
  5. Serve with 1-2 T beef gravy over top.
